What I eat in snack emergencies

Posted August 19, 2014 in snack, KIND Bars, Hy-Vee and 4 more

*My local Hy-Vee provided me with KIND bars, but all opinions are my own

I don't know how many times I've been sitting at my desk at work, running errands or spending a day shopping and then suddenly...I NEED food! Not a meal, just a little something to give me an energy boost until my next meal.

I've been known to keep a healthy supply of purse snacks with me at all times. You know, purse nuts, purse bars, maybe even the occasional purse banana.

One of my fave on-the-go snacks are KIND bars. So I was beyond thrilled when Hy-Vee offered to let me try some flavors (FYI: I'm starting a new partnership with the Kearney Hy-Vee to review products that you may like!!).

Vanilla Almond Chia Pudding

Posted February 4, 2016 in chia pudding, snacking, healthy recipes and 5 more

One of my favorite sweet snacks is chia pudding. It's delicious, filling and full of nutrition.

Chia seeds are a great source of omega-3 fatty acids, protein, fiber and calcium. I put chia seeds in my morning oats, in overnight oats, in smoothies, in pancakes, in yogurt and on salads. You can also add them to muffins, breads or cookies when you are baking.

This chia pudding is incredibly delicious. I sweetened it with dates and honey, and added some oats for a little extra staying power.

This is the perfect snack for an afternoon sweet tooth/energy boost!

Trail mix is one of my favorite healthy snacks for when I'm on the go. It provides a perfect mix of protein, healthy fats and carbohydrates, which keeps me satisfied and energized.

I typically buy nuts, dried fruit and seeds from the bulk section of my grocery store, and make my own trail mix that's full of healthy ingredients.

Pre-made trail mixes often contain candy and sugar coated nuts, so making your own can be a great way to keep the sugar content low and the antioxidants and nutrition high.
