Pesto Caesar Kale Salad with Cranberries and Almonds

A few weeks ago, the BF and I went out for a little date night at Sozo, a local modern American restaurant. I ordered a kale salad, and pretty much freaked out over how amazingly delicious it was.

I realized that it was something I could easily make at home (for a fraction of the price)! The restaurant version was topped with crab cakes, but the version I made at home was more of a side dish. You could totally add some kind of protein and make this a whole meal. You could also add some crumbled bacon (or turkey bacon) for a little saltiness - the restaurant version had little bacon crumbles.

Quinoa and Turkey Stuffed Acorn Squash

I made it through the hardest part of my elimination diet! The first two weeks, I eliminated gluten, dairy, eggs, soy, corn, fish, caffeine, nuts and alcohol.

This week, I've been incorporating foods back into my diet one by one.

One of the perks of this experiment is that I've had to get a bit creative with my cooking. Because I workout so much (I've taught 7-8 classes a week throughout the diet), I need meals that will give me lots of energy.

I loved this stuffed acorn squash because it was super filling, flavorful and full of nutrients.

How was your St. Patrick's Day?

The BF made corned beef and cabbage in the crock pot all day, I made a turkey shepherd's pie and my parents came over for dinner. I also enjoyed a Guinness and a mini salted caramel cupcake while we listened to Irish music on Pandora. It was a fun night!

Weekend Recap {Sept. 25-27, 2015}

I'm going to be honest, I wasn't excited to share my weekend with you this week. When I started thinking about how my weekend went, I could only see the negatives...I didn't get a lot of sleep, I had a headache all weekend, I didn't get much of my to do list done, I didn't do laundry, I didn't clean my house and I indulged more than usual because I didn't feel well and I was tired.

But I realized that I often beat myself up for what I don't get done. So I'm taking a moment to think about the positives from the weekend.

  • I spent tons of time with my parents and my niece, Brynn (dinner out, homecoming parade, supermoon viewing in the backyard)
  • I made delicious breakfasts Saturday AND Sunday mornings.
  • I picked so much kale from my garden.
  • I got to see that amazing moon.
  • The BF spent tons of time together.
  • I decorated for Halloween.
  • The BF and I didn't get sucked into Sons of Anarchy until Sunday.

I also realized that I want to share my super healthy weekends and my not-so-healthy weekends with you. Because this is life. Sometimes it's hard, and I struggle.

Everything you need to know about kale!

Kale has been having a major moment for awhile now, but it seems like people either love it, hate it or are scared to try it.

Almost every time that I buy kale, the grocery store associate ringing up my groceries says she's never tried kale before and doesn't know what to do with it. I always suggest massaging the kale, and I get blank stares.

Kale Strawberry Fig Salad

I know it's not berry season, but I'm ready for strawberries, blueberries and raspberries! Strawberries aren't in season locally yet and the strawberries delivered here from other parts of the country are still a bit expensive. 

While I haven't bought strawberries yet, I'm definitely dreaming up ways I can use them in recipes. 

A couple of summers ago, I lived on this salad. I ate it almost every day for weeks. I'm thinking I need to bring it back into my spring/summer salad rotation.

Yoga Teacher Training - Weekend 3

I'm absolutely exhausted today after three days of yoga teacher training, but I'm also feeling inspired and uplifted by all the positive energy of the weekend.

As always, yoga teacher training forces me to get out of my comfort zone and learn more about myself. This weekend, we practiced Kundalini yoga, which is a school of yoga that focuses on meditation, pranayama (breathing), chanting mantras and yoga asana (poses). 

It was my first time practicing kundalini yoga!
