Grocery Haul {June 2, 2014}

My last grocery haul was the first one with the BF! 

Now that the BF and I have lived together for about two months, we've decided to get more organized with our finances/budgeting.

Neither of us have ever had a budget for food before, but money has been a little tighter for both of us since we moved in together. So we're tracking our spending (especially on groceries and eating out) in September, and in October we'll decide where we can tighten things up. I'll let you know how we do!

Grocery Haul {Nov. 2} + Meal Planning

For the past two months, the BF and I have been keeping track of our grocery spending in an attempt to create some kind of food budget.

Last month, we spent over $500 on groceries!! (details here) We were both pretty appalled by our spending, so we tried to keep ourselves in check during October.

I haven't posted a grocery haul in a long time because I spent most of January on my elimination diet, and grocery shopping wasn't that fun. Most of my grocery hauls were produce, seeds, rice and rice milk (ick!).

But my elimination diet is over! (I'll post a recap soon) I'm back to eating like my old self (although I haven't reintroduced coffee and I've only had sugar for the first time this week. My sugar was in the form of Justin's Vanilla Almond Butter. To. Die. For.)

Grocery Haul {Feb. 22, 2015} + Weekly Meal Plan

How do you find healthy recipe inspiration?

I find recipe inspiration in a few ways - I watch The Chew, I flip through my cookbooks, I read health magazines and I read health and fitness blogs. I keep track of the online recipes I want to try on my Pinterest boards.

Before the days of Pinterest, I would tear recipes out of magazines and put them in a 3-ring binder. I still have a few binders full of recipes! (I should probably go through those!) I still tear recipes out of magazines, but I'm not as good about organizing them.

I also keep a list on my phone of all of our favorite recipes. Whenever the BF and I try something new and we love it, it goes on the list. Whenever I'm struggling to figure out what to add to our weekly meal plan, I often go back to our favorites list.

I always try to include one or two new recipes each week. I love trying new recipes, and it helps keep things interesting! This week we tried a rice and mushroom soup that went right onto our favorites list!

Self-Love February Recap

Easy and Delicious Gluten-Free Dinners

The BF and I have been experimenting with our diets recently, and we haven't been eating gluten. No, we haven't been diagnosed with a gluten allergy and no we're not hopping on the gluten-free diet fad.

The BF has some digestive issues that he would like to remedy, and he decided to see if eliminating gluten would make him feel better. I joined him to be a supportive girlfriend and so he wouldn't have to watch me eat bagels.

What is gluten? Gluten is the name for proteins found in wheat. It acts as a glue to hold foods together. Someone with Celiac Disease is allergic to gluten and has pretty severe reactions when they eat gluten. But someone with a sensitivity to gluten might experience foggy mind, depression, abdominal pain, bloating, diarrhea, constipation, headaches, bone or joint pain or chronic fatigue (source).

The Celiac Disease Foundation actually says you should not self-diagnose, and that you should reach out to a doctor for testing. But the BF simply wanted to see if he felt a little better not eating gluten, which is the reason for our experiment.

Crockpot Chicken Tikka Masala

The BF and I recently realized that we have a regular rotation of homemade Indian food, Mexican food and Asian food on our dinner menu. They're our favorites! We have each of them every week. My Asian rice noodles with peanut sauce keep getting better and better, but they're not perfect yet. However, our Indian meals are pretty amazing.

For a long time, we bought jarred tikka masala. But we finally realized it would be super easy to create at home. The only ingredient you need that you may not have in your kitchen already is garam masala, an Indian spice mix. If you don't have garam masala, you could just combine cumin, coriander, cardamom, black pepper, cinnamon, cloves and nutmeg to make your own. (Here's a recipe)


I made this a crockpot meal because the BF and I like to make something in the slow cooker at least once a week. Since we cook all of our dinners from scratch every night, it's nice to have one night off. It's usually Thursday nights when we're both exhausted from the week and want to have a convenient dinner.

We serve our tikka masala with jasmine rice or brown rice that we cook in our rice cooker, and sometimes we like to have naan. We just buy garlic naan at the grocery store.

How to meal prep for a healthy week

Most Sundays, I whip up a few recipes that will make eating healthy throughout the week more convenient. I've found that this is the best way to stick to healthy eating!

Why? Because eating healthy takes more work than eating junk. When you get home from work after a long day, cooking a healthy meal from scratch can seem like a lot of work. But taking a bit of time on Sunday to prep those meals is a huge time saver!

I generally prep more snacks and veggies than actual meals. But I'll occasionally roast a whole chicken or make shredded chicken breasts in the crockpot to use for chicken fajitas, pesto chicken or buffalo chicken pizza.

How was your weekend?

The BF and I didn't have any plans! It was much needed after a summer of busy weekends.

I made it a priority to do things that I wanted to do, and to avoid my to do list. I definitely need more self-care on the weekends and I need to focus more on being present. I tend to constantly look toward the future and stress about the things I need to get done.

I go into a new week feeling more recharged and rejuvinated when my weekends are filled with relaxation and fun.

Weekend Recap {Sept. 25-27, 2015}

I'm going to be honest, I wasn't excited to share my weekend with you this week. When I started thinking about how my weekend went, I could only see the negatives...I didn't get a lot of sleep, I had a headache all weekend, I didn't get much of my to do list done, I didn't do laundry, I didn't clean my house and I indulged more than usual because I didn't feel well and I was tired.

But I realized that I often beat myself up for what I don't get done. So I'm taking a moment to think about the positives from the weekend.

  • I spent tons of time with my parents and my niece, Brynn (dinner out, homecoming parade, supermoon viewing in the backyard)
  • I made delicious breakfasts Saturday AND Sunday mornings.
  • I picked so much kale from my garden.
  • I got to see that amazing moon.
  • The BF spent tons of time together.
  • I decorated for Halloween.
  • The BF and I didn't get sucked into Sons of Anarchy until Sunday.

I also realized that I want to share my super healthy weekends and my not-so-healthy weekends with you. Because this is life. Sometimes it's hard, and I struggle.

Happy Monday!

I started my day with a strength training class and a delicious breakfast - an egg scramble with spinach, kale, mushrooms and smoked gouda, sprouted grain toast, warm water with lemon and orange juice with apple cider vinegar.

I needed a nourishing breakfast and some movement after feeling blah most of the day Sunday. I'm not sure what was going on, but I had low energy, I was moody and I had no appetite. 

But I'm ready to have a positive, productive and fun week!

While I do make time to exercise and make it a priority to eat mostly healthy meals during the holidays, I definitely indulge more than usual.

I ate more sweets than I typically do, I indulged in a comical amount of cheese and I drank wine almost daily during my nearly two weeks off from work.

Happy Monday!

I'm feeling a bit overwhelmed today because I didn't do ANY work over the weekend. I had a long to do list for some upcoming projects, and I didn't cross one thing off my list. 

I just felt a bit off this weekend. I didn't sleep well last week, and felt kind of moody, emotional and blah all weekend. I really should have accepted my need for rest and relaxation, rested and enjoyed it. But instead I stressed about what I should have been doing as I did other things that weren't work.

Today, I'm feeling a bit under the weather. This is what happens when you don't care for yourself! 

This week, I'll take things one at a time to try to reduce stress. I'll also make yoga and meditation a priority so I don't get too worked up about my to do list.

Weekend Recap {Jan. 29-31, 2016}

Happy Monday!

I had an indulgent weekend celebrating the BF's birthday. We had a party with friends, a date night and brunch with my family. All the eating out has me feeling a pretty bloated and heavy today. 

So today is all about moving on and getting back on track. When I have an indulgent weekend, I don't spend time feeling guilty about my food choices. I actually enjoyed every single indulgent bite, and was happy to be celebrating my guy. 

To get back on track, I'll feed my body with nourishing foods and drinks all day. I started my morning with an apple cider vinegar drink and oats, chia seeds, blueberries, almond milk, cinnamon and almond butter. I'll sip on some green juice later in the morning, and drink lots of water throughout the day.

Weekend Recap {Feb. 5-7, 2016}

We're at the start of another week. The weekend flew by, as usual. 

I'm not feeling super hot today. I'm having some pretty terrible pain in my jaw that's causing a headache and ear ache. I'm pretty sure I have TMJ, which causes me to clench my teeth when I sleep, which causes headaches, neck pain and jaw pain. 

I got a mouth guard from my dentist to protect my teeth about a year and a half ago, but I still clench my teeth. All the relaxation techniques I've tried - yoga, meditation, drinking CALM, drinking Nighty Night tea, using essential oils - haven't worked. So I'm making an appointment to see a chiropractor this week. I'll let you know how it goes.

Weekend Recap {Feb. 12-14, 2016}

I can't believe we're already back to Monday. I know I say this all the time, but weekends go by way too fast.

I'm feeling pretty cranky today. I didn't sleep well last night, and I'm starting a very busy week with piles of laundry, a sink overflowing with dirty dishes and an overall dirty house. This makes me feel incredibly overwhelmed. I'll be teaching fitness classes or meeting with clients every evening after work, so getting these things done won't be easy. Take a deep breath!

Eating for Energy

For me, eating was either about pleasure or coping. I was either eating something because I liked the taste or I was overeating instead of coping with what I was going through.

When I began running and working out regularly, I finally realized that food was also fuel. It could make me feel great or run down during workouts. 

I later realized that food isn't just fuel for exercise. We can eat to energize our bodies for daily life.

It took me a million years to figure this out and I don't want you to spend as much time as I did sifting through books, magazines, blogs and articles! Which is why I'm sharing everything I know at my next workshop!!

Weekend Recap {May 6-8, 2016} - Girls on the Run 5K

For the past few months, I've been helping to plan the local Girls on the Run 5K. The race was this weekend, and it was a success!

If you're not familiar with Girls on the Run, it's an after-school program for third- through fifth-graders. The girls meet twice a week for 12 weeks, and the curriculum promotes building self-confidence through physical fitness. During the program, the girls train for a 5K. Then at the end, they run a 5K.

We had about 80 girls run with their run buddies and coaches, and it was such an inspiring event.

Weekend Recap (Sept. 16-18, 2016}

It's Tuesday and I'm finally writing my recap of the weekend! The weekend ended up being full because the BF's family was in town, and my Monday was a bit crazy.

I'm still working on creating a routine and managing my workload with the new class that I'm teaching at the university. I'll be honest, my Sweet Success work is getting harder to manage…which is why I turned down an offer to teach another class next semester. Saying no is so hard! 

But when I thought about my mission - inspiring people create change to live their healthiest and happiest lives - I knew I needed to say yes to myself and my goals. 

I have a full week, and it feels a bit overwhelming. So I'm making self-care a priority. I got a massage yesterday after work, I'm getting back to consistent meditation and I have a few yoga classes scheduled this week.

When we begin to eliminate processed foods from our diets, and we start eating more whole foods we start feeling amazing...and we end up spending a lot more time in the kitchen.

Weekend Recap {March 23-26, 2017} - Spring Break

I'm back to work after a glorious four-day weekend. Last week was spring break, and work was painfully slow. So I took last minute vacation days on Thursday and Friday with no plans!

It was the best thing ever to have a long weekend without having to travel somewhere or have a million things to do. I ended up enjoying slow mornings, working on my health coaching business, taking my online business classes, hanging out with my niece, drinking a lot of coffee and eating delicious food.

{Quick} Vegan Meal Prep

You have the best intentions all day to come home and make a healthy, homemade meal. But work ended up being crazy stressful, and you're exhausted. So you get take out or eat chips and guac with a glass of wine for dinner. 

Trust me, I know how this plays out. I don't know how many times I've eaten tortilla chips and guac or eggs and toast for dinner because I was exhausted and didn't feel like cooking. 

Eating a lazy meal on occasion isn't a big deal, but when it's a habit you're most likely not getting the nutrition that your body needs. This could lead to low energy, weight gain and more. 

Creating a meal planning and meal prepping routine will set you up for success throughout the week, and make eating healthy easy even on busy days.

Weekend Recap {July 7-9, 2017}

Another summer weekend has come and gone. After having two long weekends, it was sad to have a regular old two day weekend.

However, I'm home from work today. 

I'm not sure if everything is just a coincidence and unrelated or if everything is connected, but I have a cluster of painful and itchy bug bites on my neck, I have an intense pain from my jaw to my shoulder, I have a terrible headache and my throat is sore. 

It all started last Wednesday, so after six days of being in pain I'm exhausted. I also started to go down a spiral worrying about having a bacterial infection, meningitis or some other awful illness.

Luckily, I don't have anything on my schedule today. So I'm currently watching Dawson's Creek from the beginning (I haven't watched it since high school!) and I'm staying in my pajamas all day. 

I wasn't feeling well all weekend, so I spent a fair amount of time relaxing. But I also pushed through my pain for a date night and a trip to the lake for some beach time.
