Pesto Caesar Kale Salad with Cranberries and Almonds

A few weeks ago, the BF and I went out for a little date night at Sozo, a local modern American restaurant. I ordered a kale salad, and pretty much freaked out over how amazingly delicious it was.

I realized that it was something I could easily make at home (for a fraction of the price)! The restaurant version was topped with crab cakes, but the version I made at home was more of a side dish. You could totally add some kind of protein and make this a whole meal. You could also add some crumbled bacon (or turkey bacon) for a little saltiness - the restaurant version had little bacon crumbles.

Merry Monday before Christmas! I hope your weekend was festive.

I definitely felt festive over the weekend! The BF and I celebrated the holiday with friends at a gingerbread house making party, and we finished up our Christmas shopping and gift wrapping.

I celebrated the Winter Solstice with 108 Sun Salutations! And we ate some absolutely delicious food (inclduing gingerbread house ingredients).

How to meal prep for a healthy week

Most Sundays, I whip up a few recipes that will make eating healthy throughout the week more convenient. I've found that this is the best way to stick to healthy eating!

Why? Because eating healthy takes more work than eating junk. When you get home from work after a long day, cooking a healthy meal from scratch can seem like a lot of work. But taking a bit of time on Sunday to prep those meals is a huge time saver!

I generally prep more snacks and veggies than actual meals. But I'll occasionally roast a whole chicken or make shredded chicken breasts in the crockpot to use for chicken fajitas, pesto chicken or buffalo chicken pizza.

During the summer, salads are my fave. I could eat one every day. But when the weather starts to cool off, I start to crave comfort food - warm, cheesy, carby comfort food.

How to open a pomegranate + pomegranate recipes

I am totally in love with pomegranates. They are juicy and crunchy, sweet and a bit tart - absolutely yummy.

The pom is also said to be extremely rich in antioxidants, and has been shown to naturally lower blood pressure. They are also high in vitamin C and fiber. (Source)

For a long time, I would rarely buy pomegranates because they were a huge pain to open. You only eat the arils that reside inside the pomegranate so you have to get those things out somehow. But I've tested out a few methods for opening the pomegranate and I found a super easy way to get these seeds out.

Kale Strawberry Fig Salad

I know it's not berry season, but I'm ready for strawberries, blueberries and raspberries! Strawberries aren't in season locally yet and the strawberries delivered here from other parts of the country are still a bit expensive. 

While I haven't bought strawberries yet, I'm definitely dreaming up ways I can use them in recipes. 

A couple of summers ago, I lived on this salad. I ate it almost every day for weeks. I'm thinking I need to bring it back into my spring/summer salad rotation.

Yoga Teacher Training - Weekend 3

I'm absolutely exhausted today after three days of yoga teacher training, but I'm also feeling inspired and uplifted by all the positive energy of the weekend.

As always, yoga teacher training forces me to get out of my comfort zone and learn more about myself. This weekend, we practiced Kundalini yoga, which is a school of yoga that focuses on meditation, pranayama (breathing), chanting mantras and yoga asana (poses). 

It was my first time practicing kundalini yoga!
