Can you believe the school year has already started? My niece started third grade last week! Why does the summer always fly by?

Luckily, she was excited for the school year to begin. She thought the summer was too long! But she LOVES school. She comes home from school and plays school. 

Although I don't have kids, now that the school year is here I've been thinking about quick and easy ways for parents to get their kids to eat healthy. I know my niece will sometimes reach for an ice cream bar or candy when she wants a snack. But I want her to be healthy, full of energy and self-confident! 

From watching my brother and sister-in-law, I know that life can get crazy as a parent and packaged foods or fast foods are often the easiest. But there are healthier options out there (that don't cost a ton)!

What are aronia berries?

A couple of months ago, I was having a Twitter convo with another blogger about acai berries. I've been dying to buy acai berry smoothie packs to make acai bowls.

Well, Whole Foods Omaha chimed into our conversation and suggested that we try aronia berries because they are also a superfood and they are grown more locally - in Iowa.

I added them to my Whole Foods list, but I haven't been to WF since the recommendation.

Well, I just happened to spot aronia berries at Hy-Vee! I was so excited to try this new fruit.

Satisfying your popcorn cravings {without artificial ingredients!}

I'm not much of a salty snacker, but when I do have a salty craving I love having popcorn. I love the buttery, salty, crunchiness!

Back in the day, I used to eat microwavable popcorn constantly. This was in my low-cal, low-fat phase of life. I would buy light popcorn and eat an entire bag because it only contained a couple hundred calories. I've always enjoyed volume snacking!

In addition to the light varieties being made with tons of artificial ingredients, microwavable popcorn just isn't a great option.

How was your St. Patrick's Day?

The BF made corned beef and cabbage in the crock pot all day, I made a turkey shepherd's pie and my parents came over for dinner. I also enjoyed a Guinness and a mini salted caramel cupcake while we listened to Irish music on Pandora. It was a fun night!

I've been absolutely obsessed with raspberries lately. I love them on top of my morning oats drizzled with cashew butter. Mmmmm….

Have you noticed that inflammation has been a pretty hot topic in health news lately? I've seen tons of articles lately on the best anti-inflammatory foods and how to reduce inflammation. What does having inflammation mean? Well, inflammation is a normal part of the body's immune response. But excess sugar, saturated fat and processed foods can cause chronic inflammation, which plays a role in obesity, heart disease, depression and cancer. (source)

Your best bet for fighting inflammation is packing your diet full of fruits (berries!) and vegetables, whole grains and omega-3 fatty acids, and sticking to a regular workout routine. Reducing stress is also a good idea.

Vanilla Almond Energy Balls

I don't think I could survive without energy balls. I've been making them almost every week, and snacking on them before I workout, when I have a sweet tooth or when I need an afternoon pick me up.

They are the perfect sweet snack that isn't processed and full of junk!

While I've made many versions, I've been making these Vanilla Almond Energy Balls a lot lately. They're similar to my Post-Workout Vanilla Protein Balls, but a bit more simple. I was inspired to simplify my recipe to make them more adaptable after I made Keri Glassman's No-Bake Peanut Butter Protein Balls.

I like this recipe because it's the perfect base for an energy ball. You can add whatever mix ins you would like…dried cranberries, dried blueberries, mini dark chocolate chips, chia seeds, etc.

Or you can roll the energy ball in whatever topping you like…unsweetened coconut, hemp seeds, chia seeds, etc. 

You can make them your own!
