Roasting vegetables is by far my favorite way to cook veggies. They always turn out so flavorful and delicious. 

While I usually stick to roasted Brussels sprouts and sweet potatoes - my faves - I also love roasting a variety of root vegetables together. This is especially delicious this time of year when sweet warming foods taste super comforting.

Burrito bowls are my favorite easy-to-make dinners! I love this vegan tempeh quinoa version with flavorful chili and lime.

I've been surviving on avocado toast and eggs over the past couple of weeks because I haven't been meal prepping on weekends. So I decided to get myself together and make a proper dinner this week. 

I bought tempeh after the fermented foods module in the Your Healthiest You program with Robin Youkilis. Yes, even a health coach needs a health coach! I spend a lot of my time helping others reach their health goals, and I often need a little support in reaching my own. 

I tried tempeh years ago, but didn't love the way I prepared it so I never bought it again. But I'm working to incorporate more fermented foods into my diet, so I thought I'd give tempeh another try.

Enjoy the sandwich of summer - the BLT - with a vegetarian twist. Using tempeh bacon adds the flavors of bacon!


Nothing says summer like a BLT with a fresh tomato out of the garden. 

I can't even remember the last time I had one...because I don't eat bacon. 

If you're like me and avoid most animal proteins or you just want to try something new, I highly recommend making tempeh bacon. 

It's really easy - you just marinate it and cook it - and it picks up the flavors that used in the marinade.
