How a meat eater and a part-time vegetarian can live together (happily!)

As I've mentioned before, the BF and I recently moved in together! We've been living together for over six weeks now! It's been such an exciting time. We dated for 4 years (long distance) before getting a place together. Being in the same town (and same house!) has been amazing. We've enjoyed spending weeknight evenings together, working out together, organizing our new place and so much more!

But the one thing we thought might be a challenge was our eating habits. I'm a part-time vegetarian/flexitarian. I don't eat beef or pork ever. I eat vegetarian a few times a week. I generally eat chicken, turkey or fish when eating out or when the BF and I eat together. 

But now we eat together all of the time.

Health Coach Approved Meals That Will Keep You Happy and Satisfied

After traveling for a couple of weeks in June, I came home feeling extra inspired to get back in the kitchen to make home-cooked meals.

I got back to eating some of my usual meals, but I also tried a few new recipes and whipped up some delicious new dishes that I created myself.

Keep in mind that these are examples of the healthiest foods that I eat. I eat like this most of the time, but I do enjoy cocktails, cold beer on hot summer days, a trip to the fro yo shop on occasion and pizza (oh, how I love pizza!).

Living a healthy lifestyle isn't all or nothing. The majority of my diet is made up of nutritious, healthy food, so when I have a piece of cake at a birthday party or go out for drinks with friends, I don't feel guilty. I never have to start over or get back on track.

It took me a long time to get here. I used to have A LOT of food guilt. But it's so freeing to just let go of the guilt and truly enjoy food!

I typically share my weekend eats with you as part of my Weekend Recap series that I post on Mondays. In those posts, you get a glimpse of how I balance healthy eating with weekend indulgences, and how I make healthier choices when eating out. 

But my weekday meals look a bit different. There aren't typically cocktails or meals out during the week. 

Please keep in mind that I'm not sharing this to suggest that you eat like me. We are all different - one person's food is another person's poison. I recommend that you eat what makes you feel your best. This just happens to be what made me feel good on this particular day.

I'm so excited about this challenge! I've been eating vegetarian most days for the past year or so (maybe longer), and I feel pretty awesome! I have tons energy, I sleep well, my skin is glowing and so much more! 

How does going meat-free make me feel so great? On days that I go meat-free, I eat more veggies, whole grains and nutritious plant-based sources of protein. 

I've never gone full veg before, and I'm interested to see how I'll feel. I was also inspired to go meat-free after watching the documentary Cowspiracy and from my yoga teacher training. I'll share more about the yoga perspective on being vegetarian later!

I can't do this alone, so you have to do it with me!

Tofu Black Bean Tacos

I'm almost a week into Meat Free July, and I've been eating such delicious food!

This challenge has inspired me to experiment in the kitchen. Changing up your regular meal rotation can be a good thing. If you're like me, then you make the same 5-6 meals over and over again. It can get boring and make healthy eating more challenging. 

I used to try one new recipe a week. It kept meals exciting and added new favorites to my rotation. But I've gotten out of the habit of trying new recipes! Meat Free July has been the perfect opportunity to try new meals!

These tacos are super easy and delicious. To spice up the tofu, I used a blend of cumin, chili powder and cayenne pepper. It made these tacos super flavorful.

Atlanta Trip Recap

Last week, my mom and I flew to Atlanta to visit my cousin, her husband and their new baby. My aunt from Omaha was there visiting as well. 

It was a wonderful trip full of laughs, baby snuggles, good food and exploring. My mom and I went without any set plans. We've both been to Atlanta a few times and have done most of the touristy stuff. We just wanted to go with the flow and spend time with family. My cousin had planned a few fun outings for us, but we also spent lots of time just relaxing at her house.

The highlight of the trip was actually something I don't have any photos of -- me leading a short yoga practice for my cousin, mom and aunt. I haven't laughed that hard in a long long time.

Cauliflower Rice Stir Fry with Tofu

I admit, I made cauliflower rice a long time ago when it was all over the internet…then I never made it again. 

There was just something about chopping cauliflower and ricing it in the food processor that was too much…dirtying too many dishes and adding too many extra steps in my dinner making process.

So I finally decided to buy a package of pre-riced (also called 'crumbled') cauliflower and now I feel better about the whole thing. I can handle opening a package and dumping it into a pan. 

I made this cauliflower rice stir fry with tofu, and it was easy and delicious...my dinner requirements.

Happy National Guacamole Day!

Since eliminating dairy from my diet nearly a month ago, I've basically replaced cheese with guacamole. The amount of guacamole and avocados that I've eaten in the past four weeks is a little obscene. 

I can't even tell you how many times I've eaten sprouted grain bread toasted and topped with guacamole and eggs. But I have no shame!

Which is why I feel like this is a (internet) holiday worth celebrating.

I can't believe that I'm almost finished with yoga teacher training! I only have one weekend left!

This weekend was incredibly physical and intense. Last week was a very emotional week, so I wasn't super excited about being immersed in yoga all weekend. But teacher training ended up being a good distraction. 

All the positive energy through yoga practice, meditation and from everyone in my class was what I needed.

Dairy-Free Vegetarian Dinner Recipes

I've been eating dairy-free since August 17!

My functional medicine doctor, Dr. Allison Blessing, recommended that I cut out dairy to balance out my hormones. I also went off my birth control because there's no way I could balance my hormones while on birth control. (read more about it here)

So far, I've felt amazing. Within the first couple of weeks, I noticed that I looked a bit slimmer. I was most likely experiencing some bloating from the inflammation that dairy was causing. Best of all, I haven't had any hormonal migraines! 

I'm feeling really optimistic about my journey so far. Later, I'll share more about how a hormone imbalance can impact your health, but today I wanted to share what I've been eating.

It's Christmas week! I love this time of year, and I'm really grateful that I've been able to do some of my favorite holiday things - make gingerbread houses, drive around and look at Christmas lights, watch cheesy Hallmark and Lifetime Christmas movies, decorate sugar cookies and more. 

I have just a few more days of work and then I'm off work until the New Year! Getting time off during Christmas is definitely a great perk of working at a university.

Ever wonder what a health coach eats throughout the day? Today I'm sharing every single thing that I ate yesterday!

Tuesdays are my longest days, so it's important that I eat for optimal energy. I teach fitness classes at 5:30 a.m. and 5:30 p.m. and work my 8 to 5 in between, so it's a long day that requires plenty of energy.

I'm usually pretty tired by the time I get home, which is why I try to keep dinner simple - leftovers or something easy to throw together. 

I'm currently not eating dairy, and I usually only eat meat a couple times a week. Tuesday just happened to be a dairy-free, meat-free day (not vegan because I ate eggs). 

I don't count calories or track my food. I simply focus on eating whole foods that will make me feel my best.

Healthy Crockpot Freezer Meals

I got super motivated a few weeks ago, and I made eight freezer meals that can be thrown in the crockpot for super easy dinners!

While the BF and I very rarely eat out on weeknights, we often go out to eat a few times on weekends. I love going out for dinner, but it can get expensive. 

Our struggle with cooking at home on weekends is that we are usually running low on fresh produce by the weekend, and we forget to thaw meat from our freezer for the meals we planned. So I thought having meals pre-made that can just cook all day would be the perfect solution for our weekends.
